In the south, from Louisiana to Tennessee from April to June, Mudbugs reign supreme. Crawfish or Crawdads can be cooked alone boiled or sauteed, fried, put in gumbo, served as bisque, eaten in etouffee, or in many other ways. They can be served as toppings or just eaten like popcorn.
For many years, Crawfish were a seasonal treat sought after mostly as food along the Louisiana and Mississippi Coastal and Swamp Country. Pasteurisation of these tasty crustaceans resulted in them being packaged and sold year round. Weather in a restaurant eating them prepared by expert chefs or in the backyard with a couple of hundred of your best friends they are a delight to the taste buds.
