Unless you are from Louisiana and like to fish, you probably have never heard the term Sac-a-lait. Sac-a-lait is a fish that goes by a number of aliases such as: white perch, crappie, croppie, specks, speckled perch,calico bass, and I would bet there are others. Regardless the name, they are great fish to catch or to eat. It is probably one of the most sought after fish for the table.
Where I live now, the fish are called Crappie. When I lived in Louisiana, they were usually called Sac-a-lait in South Louisiana and White Perch or Crappie in North Louisiana around Shreveport or Monroe. This illustration commemorates those delectable fish that dangle from so many hooks, especially during the Spring spawn. They are prolific breeders and each year a new hatch begins and others are reaching the slot limit for catching. The lakes I fish require that all Crappie kept are at least 12 inches in length. Regulations and practicing good conservation will ensure the next generation will have plenty of this multi-named fish to catch...
